Hearty Weeknight Dinner Salad

Make a dressing

In a mortar and pestle smash 1 small garlic clove then add 4 TBSP sherry vinegar and let mixture meld while you make the salad.

When the salad and other ingredients are ready add 2 tsp dijon mustard, a splash of maple syrup and 1 TBSP of good olive oil and whisk together.

Chickpeas

Drain and rinse 1 can of chickpeas and then pat dry with a towel.

Cook chickpeas with 1 TBSP olive oil in a frying pan until golden brown and a bit crispy.  Season with salt, pepper and paprika.

Cook Quinoa

Place 1 cup Quinoa in 2 cups vegetable broth.  Bring to a boil and then cover and simmer on low for 20 minutes.  When done, leave the lid on and let the quinoa rest for 10 minutes.  Fluff with a fork when done and allow to cool.

Make a salad

Arugula or a hearty lettuce like little gems 

Chopped cucumbers

Thinly sliced red onion

Diced avocado

….add anything else you love in a salad

Toss all the ingredients together and enjoy!
