Mashed Purple Cauliflower

This recipe is so simple yet so festive for your holiday meals. There is a fair amount of purple cauliflower at the farmer’s market these days (Blue Heron Farms, Spade & Plow) so why not use it as a way to make your meal come alive with color?

Once cooked, the cauliflower actually takes on more of a periwinkle hue which is really pretty. It looks really great under a piece of roasted chicken (omg yes, chicken) - which is currently my favorite way to enjoy it.


Instructions

  • Remove the stem and cut 1 large head of purple cauliflower into large pieces. 

  • Steam or boil until fork tender, drain.

  • Place in a blender or food processor with 4 TBSP organic butter and pulse until you reach a nice balance of chunky and smooth (not too smooth).

  • Add salt and pepper to taste.
