Energy Balls

There must be thousands of recipes for energy balls on the internet.  I have made a number of versions.  This is my favorite recipe based on including so many ingredients with protein and satiating power.  As usual the recipe is a great template and you can take ingredients out or add whatever you like to best suit your own taste.  These balls are a refrigerator staple for us.  A perfect grab-and-go hunger buster.

Ingredients:

1 cup nuts (I use 1/2 cup walnuts and 1/2 cup almonds)

1 cup dates - pitted

2-3 TBSP best quality creamy Tahini ( or peanut butter or almond butter)

2 TBSP chia seeds

1 TBSP hemp seeds

3 TBSP cacao powder

1 tsp vanilla extract

1 Tbsp blackstrap molasses

Begin by blending the nuts in a food processor until they become a nice sandy texture.  Add the dates until they are well blended in with the nuts.  Add the rest of the ingredients and blend.  The mixture should stick together when you squeeze it together between your fingers however, it really depends on how moist your dates are.  Add a bit of water until you are able to roll the mixture into a ball with your hands.  

Roll all the mixture into balls and place them on a cookie sheet.  Move them to the fridge to firm up and then transfer to a container to store in the refrigerator.
