Mushroom Walnut Tacos
Meal: dinner
Season: Fall/Winter/any season
Saute:
1 TBSP olive oil
1 large cippolini onion
When the onions are getting soft and carmelized add:
2 bags chopped lions mane mushrooms
1 chopped jalepeno pepper
2 TSP ground cumin
1 TBSP fresh oregano
When mushrooms are cooked add white beans and season with:
Salt and pepper to taste
1 TBSP tamari
1/4- 1/2 cup mushroom stock (use enough to create a moist but not wet mixture)
Juice of 2 limes
Warm corn tortillas and add the filling, a few slices of avocado and top with salsa, salsa matcha, hot sauce or harissa
